OSU Institute of Technology is proud to announce the next installment of its esteemed Cowboy Chef Series, which will feature OSUIT alumna Chef Sarah Leavell.
Renowned for her innovative approach to cuisine and dedication to culinary education, Chef Leavell will headline the lunch and learn event on February 29 in the State Room, presented by the Culinary Arts program in the School of Arts, Sciences & Health.
Tickets are on sale now and are required to attend the event, costing $20 per person. All proceeds benefit The Cowboy Chef's Table Scholarship Fund for OSUIT Culinary Arts students.
Chef Leavell brings a wealth of culinary expertise and a passion for mentoring the next generation of chefs. She has honed her skills in renowned kitchens nationwide, earning accolades for her creative flair and commitment to mentoring the next generations of chefs.
Leavell serves as Executive Sous Chef at the BOK Center arena and the Cox Business Convention Center in Tulsa, Oklahoma. Her background includes roles as a culinary arts program director and experience at renowned establishments like The Canebrake and she is actively involved in various advisory committees, including OSUIT's culinary program advisory committee.
Leavell's passion for the culinary arts extends beyond the kitchen, earning her recognition in prestigious programs like the OSU Stillwater School of Hospitality and Tourism Management's Distinguished Chef Series and serving as a judge for competitions such as Skills USA and the Oklahoma ProStart.
Culinary Arts students will work alongside Chef Leavell to prepare a four-course meal with an eclectic flair.
The menu for the events includes:
- Amuse Bouche: Maple-serrano waffle dip with salted chicken skin chips
- Salad: Strawberry, watercress, black pepper-pistachio dust, house ricotta, preserved lemon oil, and balsamic reduction
- Entrée: Coriander-Chile Rubbed Beef Shoulder Tender with butternut squash puree, haricot vert, blistered cranberry salsa, and salted pepitas
- Dessert: Butter-pecan cake and Porter Peach Panna Cotta with candied Oklahoma pecan crumble, brown sugar cream, Porter peach coulis, and micro mint
- Bread and Butter: Handmade "everything" rolls with whipped butter
